Cook on a Whim: Grilled Greek Flatbreads


Easy entertaining at home is one of my favorite ways to enjoy the warmer months.

Flatbreads are at the top of my list. They are quick and endlessly versatile — the perfect salty, savory nibble to pair with a cool cocktail or glass of rosé.

I love knowing that I can have these incredibly flavorful flatbreads prepared in minutes. It’s as easy as firing up the grill and reaching for some pantry and fridge staples.

So whether you’re entertaining at home with your family or enjoying a virtual happy hour, give these flatbreads a try.

Grilled Greek Flatbreads

Ingredients

1 ball of your favorite pizza dough (or use pre-made pita, naan or flatbread of your choice)

1/4 cup sun-dried tomatoes, drained and chopped

1/4 cup peperoncini, drained and chopped

1/4 cup Kalamata olives, drained and chopped

1 cup hummus

1 cup Greek yogurt, thinned with milk to make a sauce-like consistency

Crumbled feta (optional)

Chopped fresh herbs such as parsley, dill, chives and oregano (optional)

Sliced marinated artichoke hearts (optional)

Instructions

If using fresh pizza dough, divide into 2 to 4 small dough balls and roll very thin — about 1/4 inch to 1/8 inch. Grill dough (or pre-made flatbreads) for 1 to 2 minutes per side on a very hot, preheated grill or grill pan until cooked through and you have nice grill marks.

Remove from grill, top with a thin layer of hummus, drizzle with yogurt sauce and top with chopped sundried tomatoes, peperoncini, olives and any or all of the optional additions.

Slice and serve!
