Four Seasons, Michael Mina Bring Top Chefs, Food to Wine & Dine


Four Seasons Hotel and Michael Mina’s Bourbon Steak DC held the third Four Seasons DC Wine & Dine, a culinary showcase held in collaboration with Company Fine Wine, on Nov. 14 and 15 — benefiting cancer research at MedStar Health.

The annual fine food and wine extravaganza featured culinary talent including chefs Tyler Florence, Markus Glocker, Jet Tila and Quentin Welch alongside Michael Mina.

“We are thrilled to host the third annual Four Seasons DC Wine & Dine at Bourbon Steak’s flagship location in our nation’s capital,” Mina said. “This remarkable event brings together some of the country’s brightest chefs for a night of exceptional food in support of philanthropy. It’s a unique opportunity to not only celebrate our shared passion for culinary excellence but also to support a vital cause—funding groundbreaking cancer research right here in D.C.”

A cocktail reception on Nov. 14, featured passed hors d’oeuvres and chef stations from Michelin-starred and James Beard Award-winning chefs. With Chef Michael Mina headlining alongside other top culinary talents, the gastronomic celebration offered guests unparalleled access to some of the nation’s best chefs. One happy taster quipped, “Is there caviar in my teeth?”

The culinary stations were quite the epicurean adventure.

Jet Tila: Satay Lamb Chop, Peanut Sauce & Cucumber Relish

Markus Glocker: Yellowfin Tuna, Crispy Grains, Citrus Vinaigrette, Togarashi

Michael Mina: Urfa Dusted Tuna & Falafel; Grilled Wagyu Beef Kebabs with Matbucha & White Yam Puree

Quentin Welch: Shellfish & Caviar Station

Adam Sobel: Sobel Bros. World Famous Wagyu Pastrami, Marbled Rye, Spicy Brown Mustard

Tyler Florence: French Onion Tart with Marjoram and Black Truffle

Bilal Wshah: Pan-Seared Scallops with Pomelo Sauce Caviar & Micro Celery; Beef Short Rib Spring Roll with Cabbage, Carrots, Swiss Cheese & Salsa Macha Mayonnaise

Wine and whiskey tastings featured Nancy Kaplan with Arkenstone & Maxem Wines, Ry Richards with Chappellet and Rare Character whiskey.

The Four Seasons DC Wine & Dine showpiece event, the Fine Wine & Celebrity Chef Dinner, took place on the evening of November 15 at Bourbon Steak. The special event featured an array of celebrated visiting chefs. Among them were James Beard Award Semifinalist, Food Network star, and bestselling cookbook author Tyler Florence from South Carolina; Austrian-born, James Beard Award Semifinalist Markus Glocker, praised by New York Times critic Pete Wells for his “sniper’s accuracy at the stove”; and L.A-based chef, culinary anthropologist, entrepreneur and Food Network star Jet Tila. The intimate, five-course tasting menu included one dish from each chef, with wine pairings selected for each course from host winemakers Chappellet Winery, Maxem Wine and Akenstone Vineyards in collaboration with Company Fine Wine. Additional spirit partners include IWA Sake of Japan, Rare Character Whiskey and The Macallan.
