Cook on a Whim: Spiced Rye Waffles with Roasted Apple Topping


Apple season is in full swing and, since I always go overboard at the farmer’s markets and orchards, I’ve been coming up with lots of new recipes to use up the season’s bounty: apple pies, apple sauce, apple butter, roasted apples with herbs and onions — for a savory side to go with just about any main course — and these spiced waffles topped with brown sugar and butter-roasted apples.

Full of the coziest fall spices, these waffles are the perfect weekend breakfast for these crisp, cool mornings.

Make the apple mixture first, so it can roast and fill your kitchen with the most wonderful aroma while you prep the waffles.

The rye flour isn’t essential to the recipe, but it adds a nice nutty flavor and a bit of healthy whole grains. Feel free to use whole wheat pastry flour in its place (or just use all-purpose).

These really don’t need anything extra, but if you wanted to add something creamy I’d suggest a dollop of lightly whipped, unsweetened cream or a scoop of good, full-fat Greek yogurt.

Spiced Rye Waffles with Roasted Apple Topping

For the Waffles:

 

Ingredients

1 cup all-purpose flour

1 cup whole wheat rye flour (I prefer Bob’s Red Mill)

2 tablespoons sugar

1 tablespoon apple pie spice (recipe below)

1 tablespoon baking powder

1 teaspoon salt

1 3/4 cups milk

1/3 cup vegetable oil

2 eggs

 

Instructions

Combine the flour, sugar, baking powder and salt in a mixing bowl. Whisk the milk, vegetable oil and eggs together in a separate bowl and add to dry mixture. Stir until almost blended, but don’t worry if you have a few lumps. Scoop batter into your preheated waffle maker (about 1/3 cup) and cook according to instructions — approximately five minutes or until the waffle maker stops steaming.

 

For the Apple Topping:

 

Ingredients

2 peeled, cored and thinly sliced apples (whatever variety you love!)

1/4 cup brown sugar

1/4 cup butter

1 teaspoon vanilla extract

Pinch of salt

1 teaspoon apple pie spice (recipe below)

 

Instructions

Preheat oven to 400. Place butter, sugar and spices in an oven-safe skillet over medium heat. Cook until bubbling. Add apples and toss to coat evenly. Place skillet in oven for 20 minutes until apples are soft and syrup is bubbling. Remove from oven, stir in vanilla, spoon over waffles and enjoy!

 

For the Apple Pie Spice:

 

Ingredients

1/4 cup ground cinnamon

2 teaspoons ground nutmeg

1/4 teaspoon ground allspice

1 teaspoon ground ginger

1/2 teaspoon ground cardamom

 

Instructions

Mix together and store in a small jar.
