Cook on a Whim: Coconut Kiwi Parfaits


These parfaits were a truly on-a-whim recipe creation. I had some cans of coconut milk in the fridge and I had a bunch of kiwis, so I decided to make a paleo-friendly, completely sugarless treat.

Despite the indulgent treats I share on my Instagram feed and my blog, Jason and I actually eat pretty healthfully and clean most of the time, especially during these hot months.

This is a cool, totally no-bake/no-cook dessert — or, heck, even a breakfast treat you can whip up in minutes. Use any fruit you have lying around. For this version, I used whipped coconut cream layered with sweet and tart kiwis.

I feel guilty even calling it a recipe.

I just scooped the hard coconut cream from two cans of full-fat, organic coconut milk into a mixing bowl and whipped it with a hand mixer until it was fluffy and smooth. At this point, you could add flavorings like vanilla and a squeeze of honey if you want, but I think coconut milk has a nice natural sweetness all on its own.

Then I just layered the cream into little jars with some chopped and mashed kiwi. That’s it! Really simple, clean and totally good for you.

Coconut Kiwi Parfaits

Ingredients

2 cans full-fat, good-quality (no additives) coconut milk, refrigerated overnight

4 or 5 kiwi fruits, peeled and diced

Instructions

Open cans of coconut milk and scoop just the solid coconut cream into a mixing bowl. Whip with a hand mixer until very light and fluffy like whipped cream. Layer this mixture with kiwi fruits in small jars or bowls. Enjoy immediately or refrigerate until ready to serve.
